Deluxe Creamy Baked Mac & Cheese
Directions:
- Prepare the Macaroni Noodles
1) Place 1/2 tablespoon of salt in a large pot of boiling water.
2) Boil 1 full box of Macaroni Noodles (1 lb.) in the boiling water for 10 minutes.
3) When finished, drain the macaroni in a colander then set it aside.
- Pre-heat the Oven to 350 F
- Make the Creamy Cheese
4) Measure out the remaining ingredients and set them aside.
5) Melt the butter in a large pot on Medium/Low heat.
6) Add the flour to the butter and mix continually until all lump are gone.
7) Add in the seasonings and mix continuously until the mixture begins to deepen in color slightly.
8) Immediately whisk in the milk.
9) Turn the heat up to Medium/High.
10) Whisk continuously until the mixture begins to thicken.
11) Turn off the heat and mix in the shredded cheeses.
11) Fold in half of the cooked macaroni noodles then fold in the other half.
- Time to Bake
12) Spread the macaroni and cheese in a 3 quart casserole dish.
13) Bake the macaroni and cheese in the pre-heated oven at 350 F for 25 minutes.
14) Remove the macaroni and cheese from the oven and enjoy.
Helpful Tip: Turn the temperature down if the mixture starts to change color. If the butter turns brown or the cream stick to the bottom of the pan, it will not turn out as well.

Lactose Free Variation
- Boil only 1/2 box of Macaroni Noodles
- Follow the instructions, but use Lactose Free Milk and omit adding the cheeses
- Mix the cooked macaroni with the milk cream mixture * without the cheeses*
- Place Mac & Milk Cream in a small casserole dish
- Cover bake for 15-20 minutes
- Boil only 1/2 box of Macaroni Noodles
- Follow the instructions, but use Lactose Free Milk and omit adding the cheeses
- Mix the cooked macaroni with the milk cream mixture * without the cheeses*
- Place Mac & Milk Cream in a small casserole dish
- Cover bake for 15-20 minutes
Holiday Sweet Potato Casserole
Directions:
1) Wash and peel 4 good-sized sweet potatoes.
2) Chop the potatoes in chunks then steam them in a double steamer for 20 minutes.
3) Place 2 heaping cups of the cooked sweet potatoes in a glass or metal bowl.
4) Mash the potatoes slightly.
5) Mash in 2 heaping cups of drained canned Yams (Sweet Potatoes).
- Preheat oven to 350 F
6) Melt the butter in a medium pot on medium/low heat.
7) Add 6 Regular-Sized Marshmallows to the butter (3/4 Cup mini marshmallows).
8) Mix occasionally until melted.
9) Mix in the cinnamon.
10) Place the mashed potatoes and the marshmallow mixture in a mixing bowl and blend until smooth.
11) Pour the sweet potato mixture in a 2 quart casserole dish and line the top with marshmallows.
12) Bake for 10-12 minutes or until marshmallows are tan-brown.
